Simple Pancakes-makes 8 to 10 pancakes

Ingredients

.250g/2oz Supervalu Plain Flour

.2 Supervalu Eggs

.400mls/14fl oz Supervalu Fresh Milk

. Pinch of salt.

.Supervalu Sunflower Oil-for frying

 

Preparation:

To make the pancake batter.sift the flour into a bowl,add the salt and make a well in the centre.Break the eggs into the well and add a little of the milk.Gradually add the remaining milk into the egg and flour mixture using a large whisk until a smooth consistency has been achieved.Cover with cling film and stand in the fridge for 1 hour if possible.

 

Heat a heavy based frying pan and when hot,brush with the minimum oil.Pour a small amount of the batter onto the pan and swirl it around until it is evenly and thinly spread over the bottom.Cook ocer a moderate to a high heat for about 1 minute or until edges are curling and the underside is golden.Flip over and cook the second side for 30 seconds or so until golden.

 

Topping ideas:

The classic topping a sprinkle of sugar & a squeeze of lemon juice.

 

For something a little different:

Try some fruit salad drizzled with Supervalu Supreme Vanilla Yoghurt mixed with a little honey or for something more indulgent try:

Banana & Butterscotch Sauce:

Ingredients:

2 Supervalu Bananas-thinly sliced

120g/4oz Supervalu Irish Creamery Butter

120g/4oz Supervalu Brown Sugar

120mls/4fl oz Supervalu Fresh Cream

 

Preperation:

Place the butter and sugar in a small pan over a high heat stirring continuously to form a caramel.Pour in the cream and be careful as the liquid will expand,bring back to the boil for 1 minute then remove from the heat.
